All Purpose Umami Seasoning

INGREDIENTS

½ cup (70 g) kosher salt, optional
2 Tablespoons (22 g) onion powder
1 Tablespoon (12 g) garlic powder
2 Tablespoons (15 g) pink peppercorns
½ cup (20 g) dried porcini mushrooms
1 teaspoon (2 g) red pepper flakes

DIRECTIONS

  1. Place all ingredients into the Vitamix container in the order listed and secure the lid.
  2. Start the blender on its lowest speed, then increase to Variable 7. Blend for 15 to 20 seconds or until desired consistency is reached.

Chef's Notes

Homemade seasonings are an excellent option, especially for those who want to adjust the salt to their own needs or preference. For a spicier blend, substitute 2 tablespoons of black peppercorns in place of pink peppercorns. This can optionally be made without the kosher salt for a salt-free seasoning. Dried mushrooms carry a vast amount of flavor and when cooked create a very tasty and flavorful dry rub, seasoning or marinade for meats, fish, or vegetables. Make this tasty seasoning salt-free for a heart healthy mix.
