Tub of Banana Ice Cream

INGREDIENTS

½ cup (120 ml) whole milk
½ cup (120 ml) heavy cream
½ cup (100 g) granulated sugar
½ cup (120 ml) skim milk powder
1 teaspoon vanilla extract
1½ cup (210 g) ice cubes
5 frozen bananas, peeled, halved

DIRECTIONS

1. Place all ingredients in the Vitamix Container in order listed and secure lid.
2. Select Variable 1.
3. Turn machine on and slowly increase speed to Variable 10, then to High. Use the tamper to press the ingredients into the blades.
4. In about 30-60 seconds, the sound of the motor will change and four mounds should form.
5. Stop machine. Do not over mix or melting will occur. Serve immediately.

Chef's Notes

You can replace the full cream milk with soy milk, if preferred. Freeze unused ice cream in an airtight container. When ready to use, allow to soften at room temperature for 8-10 minutes before serving. Create milk ice cubes for a silkier texture by freezing whole milk in ice cube trays and replace these for the ice cubes in the recipe.
