Caribbean Dry Rub

Make amazing jerk chicken with this sweet and spicy rub. Allow to sit on raw meat for 10-15 minutes before cooking to maximize flavour.

INGREDIENTS

¾ cup (165 g) dark brown sugar, packed
2 Tablespoons salt
2 Tablespoons dried thyme
1 teaspoon ground allspice
2 teaspoons crushed red pepper flakes
1 teaspoon garlic powder
½ teaspoon ground cloves
¼ teaspoon dry mustard

DIRECTIONS

1. Place all ingredients into the Vitamix container in the order listed and secure the lid.
2. Select Variable 1.
3. Turn the machine on and slowly increase speed to Variable 10, then to High.
4. Blend for 10 seconds.
5. Rub on raw meat. Let sit for 10-15 minutes before cooking.
