Moroccan-Spiced Sweet Potato Soup

INGREDIENTS

1 tablespoon extra virgin olive oil
1 medium (130 g) yellow onion, peeled, cut into large chunks
3 garlic cloves, peeled, smashed
1 teaspoon cumin seeds
1 teaspoon coriander seeds
¼ teaspoon black peppercorns
2 teaspoons paprika
2 (400 g) sweet potatoes, cooked, halved
3½ cups (840 ml) vegetable broth
½ teaspoon kosher salt, optional

DIRECTIONS

  1. Heat the olive oil in a medium saucepan over medium heat. Add the onions and garlic and cook until translucent, 2 – 3 minutes. Add all spices, cooking until aromatic, 3 – 4 minutes.
  2. Place the cooked mixture into the Vitamix container along with the sweet potatoes, broth, and salt, then secure the lid.
  3. Start the machine at its lowest speed, then quickly increase to its highest speed. Blend for 4 – 5 minutes or until steam can be seen from the vented lid plug.

Chef's Notes

Sweet potatoes are a rich source of Vitamin A. Be sure to leave the skin on these delicious, nutrient-dense veggies.
