140 g (1 cup) almonds, raw or roasted
120 g (1 cup) walnuts
260 g (2 cups) raisins
6 dates, pitted
¼ teaspoon vanilla essence
75 g (1 cup) unsweetened shredded coconut
- Place the almonds and walnuts into the Vitamix container and secure the lid. Select Variable 7. Pulse 6 to 8 times or until the nuts are finely chopped.
- Remove the lid and add the raisins, dates, vanilla extract, and shredded coconut. Secure the lid. Select Variable 10. Pulse 25 to 30 times, using the tamper to press the ingredients into the blades.
- Remove the mixture from the blending container and roll into ½ ounce (15g) balls. Chill before serving.
