Oat Flour Waffle

Alternative flours are a great way to add extra flavor to simple breakfast recipe. Try adding pumpkin pie spice to this batter for an autumn twist!

INGREDIENTS

2 cups (480 ml) Almond Milk
2 (60 g) large egg whites, or aquafaba
6 (50 g) large pitted dates
1½ cup (153 g) oat flour
1 cup (125 g) whole wheat flour
2 teaspoons baking powder
⅛ teaspoon kosher salt, optional

DIRECTIONS

1. Place all ingredients into the Vitamix container in the order listed and secure the lid.
2. Start the blender on its lowest speed and quickly increase to its highest speed. Blend for 30 seconds.
3. Preheat the waffle maker to desired temperature. Pour batter into the heated waffle iron and bake until cooked through.

Chef's Notes

When using alternative flours, measuring by weight instead of volume helps tremendously as each flour absorbs liquid differently. The batter can be adjusted with more flour or liquid as needed. Select an alternative flour according to your taste - each has its own flavour profile, bean flours are very savory while oat flour has a mild flavour, for example.
