INGREDIENTS

85 g (¾ cup) chopped nuts
280 g (2¼ cup) plain flour, divided use
175 g (1 cup) margarine
1 teaspoon vanilla essence
¼ teaspoon salt, optional
60 g (½ cup) icing sugar
icing sugar

DIRECTIONS

  1. Heat the oven to 190 °C (375°F).
  2. Place nuts into the Vitamix container and secure lid.
  3. Select Variable 1.
  4. Turn machine on and slowly increase speed to Variable 4.
  5. Blend for 10 seconds. Remove to a bowl.
  6. Place half the flour, half the margarine, vanilla, salt, icing sugar, remaining margarine, and remaining flour into the Vitamix container in the order listed and secure lid.
  7. Select Variable 1.
  8. Turn machine on and slowly increase speed to Variable 5.
  9. Blend for 10 to 15 seconds, using the tamper to press the ingredients into the blades.
  10. Transfer to the bowl with the nuts and stir to incorporate.
  11. Shape the dough into 2.5 cm (1 inch) balls and place about 2.5 cm (1 inch) apart on an ungreased baking tray.
  12. Bake 10 to 12 minutes until set but not brown. Remove to cool for 10 minutes.
  13. Roll the warm cookies in sifted icing sugar and cool on a wire rack.
